Recipe:
3-4 lbs beef knuckle and marrow bones
2 lbs meaty bones
1/2 c apple cider vinegar,
4 qts water
2 celery stalks
3 carrots
3 onions,
fresh parsley
sea salt to taste
Soak bones in water and vinegar for an hour. Add more water if needed. Add vegetables, bring to a boil, skim the scum from the top and discard. Simmer for 1 – 3 days. Add parsley at the end. Let the broth cool and strain. Add sea salt to taste. Use within a week, or freeze for later. Awesome alone, as soup base, etc.
